Chef Jean-Pierre cooks onions first- separate from the garlic, then adds the garlic. It becomes aromatic at 148 degrees (F) and if we don't add something to soak up the flavor, the house will smell great but the dish will be relatively flavorless.

This recipe isn't roasted potatoes and eggs. This recipe is for a spicy goulash which is a mix of ingredients as you cook here.

When I was last in Spain, walking the Camino, breakfast was bread, jam and a coffee. I can't believe us pilgrims missed out on such a great dish.

Thank you for inspiring me! I didn't have the sweet smoked paprika so I used my smoked paprika and added a tiny bit of real cinnamon and instead of black pepper at the end, I sprinkled some chili flakes on the eggs! A delicious dish!

I made this for breakfast today and OMG, I love it! My mom loves it! The flavor of smokiness-sweetness of paprika brought "sunshine in my system". I felt great for the day ?

I made this today and it was a hit, but it took a little while longer to cook the eggs than I htought and I had to add a tad more water to create some steam, next time I will tweak it little, but I have to say it was a very savoy dish, I will make it again for sure

Loved the way the potatoes turned out to be! Gotta try it. I’ve lost 50lb just by having a heavy breakfast like this one followed by light lunch (mostly fruits) and skipping dinner.
