North America's Original Cuisine – Foodways with Jessica Sanchez, Episode 8

DESCRIPTION

In a remote corner of Colorado known as Dunton Hot Springs, Executive Chef Karlos Baca is educating guests on the meaning of indigenous cuisine. Using the bounty of the land such as bison and foraged forest ingredients, chef Baca continues to carry on the traditions of his ancestors not only through his cooking, but by emulating the meaning of the phrase “sun dancer.”

This is a rare opportunity to taste indigenous food, as many Indigenous peoples regard the "selling" of food as inconceivable.

No wonder the carnivore diet is becoming a health hack. I adventure with pure pemmican, just lean meat and fat. Let your digestive system rest, eat in an 8 hour window or less. Avoid seed oils at all cost. Gluten and other lectins a no-no. Don't over consume high oxalate foods like spinach, beets, almonds, rhubarbs.

i found some native american artifacts in my backyard and were trying to figure out what they were used for i donated them to the local native museum and they say they think these stones are used for some flour milling process upto 1500-2000 years old

This video was dissapointing to me; too much talking, the restuarant food food being very arty farty. There was little about carbohydrates i.e. breads or bisuits (of a kind), the vegetables and what they did with them, how they prepared meat, what fruits they ate, and what they did with them.

I hate what the white man did to our country. I would have been happy just Living amongst the Indian, to me that would have been better for the Country.

This is totally completely incredibly amazing as someone who loves to pick blackberries and live natural this is a inspiring story of a chef true to his heart to the native culture that he was bread into!

People just don't understand the values of "real foods" Alot of Native Americans in history cut out GMO european settler foods over the years It was shown sugar flour and other store bought products lead to Cancers Diabetes heart issues Natives in the part was common to see ages in the 90's and 100's And reduced since the "new foods" came faster then Non Natives
These "preppers" "survivalist" stock up on can goods And rice beans pasta ……….Great What happens when Things dont get better And the food in your house is all gone? No more electric power?
My father thankfully took me to the woods And shown me how to hunt and forage Make a snare line Butcher a moose dry And salt meats Gather Birch water Make pitch glue from pine trees Sumac tea The answer is from the same forest people are cutting down

Thank you for not taping the more sacred aspects of plant harvesting. It seems nothing is sacred these days, and we all need more guidance on the value of protecting and secluding cultural knowledge. Also, was there some chemistry goin on here?

The sad part of my people, try and look up a American Indian recipe and you get fry bread. Fry bread is important because it fed my people but it’s not by choice originally. But , as an Indigenous person, and that’s what needs to be searched you do find more.

This video is so powerful for me. My family is from the San Juan valley. Half Apache and half Spanish. I’ve been on a journey to trace my roots. Thank you for this. I would love to meet Chef Baca

I'm so happy first nation chefs are bringing indigenous cuisine to the forefront. It has alway been a food desire of mine to know what indians ate here b4 the Spanish & European invasions. Thanks for posting this video.
