Many of these dishes are not of Latin cuisine, they are actually of American indigenous origin predating any European contact: mole, pepian, pupusas, for instance, have been around before Latins arrived.

Muchos de estos platillos no son de la cocina latina, mas en realidad son de origen americano indígena que preceden cualquier contacto europeo: el mole, las pupusas, y el pipián, por ejemplo, han existido antes de la llegada de los latinos.

Important to know: most of Latin American cuisines are NOT spicy, only a few countries like Mexico use hot sauces in their food, but most of the countries don’t use spicy sauces or powders. Also: some countries share the same dishes but with different variations: Pupusas in El Salvador and Honduras, Ceviche in Peru and Ecuador, Arepas in Venezuela and Colombia, Tamales/Hallacas in half of the countries and finally, Empanadas, empanadas whether made out of wheat or corn is practically common in every single country.

Brazilian feijoada is not served like a soup, it goes over white rice, and has a sidedish called farofa. Desert always consists of a fresh orange, which helps digest this wonderful delicacy.

Mexican mole done the original way has some 27 ingredients, dark chocolate definitely being one of them. There are regional variations and flavors, so the recipes vary accordingly. Always served with mexican rice, or white rice. Of course fresh tortillas .
