    Yes chef. Sick of hearing Sheppar's pie is also beef. Just because people say irregardless doesn't mean it's a word. My ma is Irish. I've been in the hotels for 15 years as chef. On st Patrick's day I say no corned beef and cabbage. Not really Irish

    Very close to the way I make shepherd's/cottage pie, much the same the way my Gran used to make it (and she was Irish.) Oddly enough, my own Mum couldn't make it to save her life.

    I despair of people who pre-cook the base almost to destruction – forgetting it's about to go in an oven anyway. I tend to use frozen peas and carrots too just before the oven – they turn out better.
    No cheese in the mashed potato though – just too rich for me. But I do mix parmesan and breadcrumbs and sprinkle on top 10 minutes before taking it out of the oven. And I like the mash top to be at least as thick as the filling.

    I'm half-Irish by the way. When it comes to potato, I don't get hungry – I get withdrawal symptoms.

    My Gran had a permanent pot on the side of her open fire kitchen range. She started it in the 1940s and it bubbled there permanently – added to every day with everything from gamebird to rabbit – until the mid-1970s when she passed away. I once asked her if that pot was hygienic. She replied "My boy – anything that still lives in there, deserves to live!"
