    Clarified butter…wtf. I grew up in PA in the 60's nd 70's then moved to Ohio. I had great hash browns in both places from restaurants and family. Nobody used clarified butter back then, no need for it now. Whole butter is the best, real whole butter. Lard and bacon grease work too. Clarified butter is for losers. Try it Chef John.

    Germans love ketchup a lot! It just tastes very different from American. There are many different flavors as well. American ketchups all taste very similar.

    My breakfast potatoes always taste like printer paper and elmers glue. I wash and dry them and use russet potatoes but restaurant hashbrowns always taste 10 times better.

    Chef, I like your channel very much and try quite a few of your recipes. I know how you love cayenne. I love habeneros! I buy them at the market and put them on a wire rack on a cookie sheet and slow roast in the oven at 225 so they dry out. Takes a while and your kitchen gets quite spicy. I have a coffee grinder I use for spices and then I powder them. Great on my morning eggs! Try it, you'll like it! Keep up the good work!!
